20 Min. Meal in Pictures: Southwest Stir Fry

While making this meal the other night, I began to take snapshots of each step with the idea that maybe I can put the recipe on here in pictures. This meal is kid-friendly, versatile, quick, and delicious. Enjoy!

(For ease of grocery buying, the ingredient list is below the  pictures - Would love opinions on this style of recipe sharing!)

 The basics
Throw it in and saute

Saute until the asparagus (or spinach if you like - or leave the green veg out) is bright green but still slightly crunchy

Quick fry a corn tortilla to soften

Put the veggie mix on top of the tortilla with a bit of cheese...

Possible toppers

Make extra, they are likely to ask for seconds!
The Ingredient List:

Olive oil
Half an onion, chopped
Can of black beans
One small green bell pepper, chopped
One small red (or other color) bell pepper, chopped
Cumin (I'm a huge cumin fan, so put in as much as you like!)
Salt (black beans need salt but make this to taste)
Cube of veggie bouillon
1 1/4 c. frozen corn
Can diced chili peppers
Four or five asparagus spears, or alternately a large handful of fresh spinach
Corn or flour tortillas (or tortilla chips - this makes a good dip for later on too)*
1 or 2 tomatoes, roughly chopped*
1 or 2 ripe avocados, peeled and roughly chopped*
Shredded cheese*

Coping With Frugality

  1. Tillie, That looks sooo good! I might leave out the asparagus (I like it all by itself), but it is perfect otherwise:0 Thanks for linking up today and giving us a great idea for the kitchen! I hope you and your household are blessed.

  2. I love the addition of the asparagus. Thanks for sharing with Delicious Dish Tuesday. Would you mind providing a back link when you get a chance?

    1. Thanks for the reminder, Amanda! I meant to put the link on here and got caught up in kids' stuff! It should be on here now :)

  3. This looks SO good, and I love the variety of veggies in it! Sounds wonderful, thanks for linking up to Delicious Dish Tuesday!

    1. The best part is how versatile it is. You can throw just about anything in that you happen to have on hand. Thanks for stopping by!

I look forward to hearing your thoughts!
